HP Notebook x2 - 10-p018wm
Microsoft Windows 10 (64-bit)

I need to know if it possible to upgrade from 64GB eMMC storage to 1TB SSD on this device? Also if it possible to gut the case and replace with an i7 motherboard/processor so the device can be upgraded to Windows 11?

eMMC is for Embedded MultiMediaCard  that means it is soldered to its system board not replaceable. The specs of your machine is

You can't replace CPU too, it also is soldered to its system board.

 

If you wish to install Windows 11, please try

 

                  Installing Windows 11 on devices that don't meet minimum system requirements
