How am I supposed to update the firmware on this printer if I only have a Mac, please?

You may be able to do it by following these instructions under these instructions "Update directly from the printer" :
https://support.hp.com/us-en/document/c02919168

It will have to be connected to the network, by ethernet or wifi.

 

According to the manual, you may be able to do it on the embedded web server :

Take a look around there and see if firmware update is available.
