I'm trying to update the firmware on my Color LaserJet Pro MFP M479fdn printer. Typically, I can just go to HP's website and download the most recent firmware for my printers, but I can't find any for this specific printer. The only option to download is the update utility, which isn't working for me. Where can I find the most recent firmware for this printer?

Open the .exe file you already downloaded with 7Zip or other zip program and extract the highlighted .ful2 file as shown below and copy it to the root directly of a usb key formatted to fat32. Insert the key into the front usb port on the printer, wait until you hear the usb recognition beep and then go the USB icon on the control panel and you should see a "firmware update" option. Alternatively, you can power off the printer, install the usb key and then boot the printer and it should automatically apply the firmware.
