Can't choose media type using print dialog box

I change paper type all the time. I'm being forced to walk over to the printer and physically press the OK button to accept the spool and paper type.

I do not see any options as I would expect to choose the media type in the dialog box on either my PC or Mac.

To avoid walking to the printer you can on the printers menu set the correct paper size and paper type for the specific tray, the settings on your printer and on your computer must match and the printer will automatically print without user intervention.

If you have a mismatched setting on your printer and on your computer then walking to the printer is needed.

I am changing paper types constantly. So, this does not help, unfortunately.

AND I see nowhere in my dialog box to choose a paper or media type.
