Hello,
I’ve have used this printer for about 3 years with zero issues. It is only used to print from an iPhone and iPad . Now when I try to print my phone says “connecting to printer” stays on the screen for several minutes then disappears. The printer never responds. I also tried today to scan something and after several tries it did finally scan so I know the issue is printer related and not my iPhone. I have already checked for updates and ran the wireless check. Hopefully someone has a solution as it’s becoming very frustrating! Thank you

Try the steps below-
Step 1: Update the printer firmware
A firmware update might be available that resolves the connection issue.
-
Update directly from the printer: Depending on your printer model, update from the HP ePrint menu
, or locate the update feature in the Setup, Service or Settings menu.

Download updates from HP Customer Support: Go to HP Software and Driver Downloads, type your printer model, and then locate Firmware in the list of available downloads.
If the update does not resolve the issue, continue to the next step.
Step 2: Update to the latest iOS or macOS software version
Check for and install any updates on your device.
Update iOS to the most recent version.

From your mobile device, touch the Settings app, and then touch General.

Touch Software Update.
Your device automatically searches for the latest iOS update.

If an update is available, touch Download and Install, and then follow the on-screen instructions to install the update.
NOTE:
For more information about iOS updates, go to Update the iOS on your iPhone, iPad, or iPod touch (in English).
If the update does not resolve the issue, continue to the next step.
Step 3: Restart the printer
Restarting the printer might temporarily resolve the issue so that you can quickly finish any important print jobs.

Turn the printer off, and then wait 5 seconds.

Turn the printer on, and then wait until the printer is ready to print.
-
If needed, print any important print jobs.
Step 4: Disable IPv6 on the printer
If the printer is using the version 6 Internet Protocol (IPv6), set it to use IPv4 to reduce the chance of connection errors.
Printers with a touchscreen control panel
Use the menu on your printer control panel to set IPv4.

From the home screen on the printer control panel, touch the Wireless icon
.

Touch the Settings icon
, and then touch Advanced Settings.

If IPv6 is set to Off, the printer is already using IPv4. Skip to the next step.

If IPv6 is set to On, touch to turn it off, and then touch Yes to confirm.

Try printing from AirPrint.
