HP LaserJet MFP M479 - Default Setting Black & White

Settings on iPadHi,

maybe someone can help me to find the way to set Black & White as default for my printer.

In detail, my kids print out a lot for school. they use the iPads and Print via WLAN direct to the printer.

There is an option to select from „default“ Color to B/W, but sometimes they forget and then the pages are printed in color (which means 6 times higher costs 😞 

Therefore, I look for an option, that B/W is the default and Color have to be selected if necessary.

Sorry the picture is in german,  but you can see you have to select Schwarzweiß (Black and White) which the kids sometimes forget.
