**edited That worked! I'd love to hear what prompted that approach, but I'll take the solution!!! How do we mark PatMaraj's post as Accepted Solution, I don't readily see it.
Minor notes added b/c I blew right past the the magic "Let me pick from a list..." bullet the first couple times (was too excited to have a legit possibility for a solution...)

- In Device Manager, open up Universal Serial Bus Controllers
- Find the 8100 Series device
- Right-Click -> Update Driver
- Browse my computer for driver software
- Let me pick from a list of available drivers on my computer
- Choose USB Composite Device
Printer was recognized immediately, wow. Good luck all, hope the magic happens for you as well.
