When I click the Scan button, it gives me a list of things I can do.  Most of them work as expected, but there is one that says "Scan to print MyComputerName".  I can click on it, a scan happens, but I don't get a choice as to what printer to print to.  And nothing prints anywhere.  Where is this configured?  Or am I missing something?

"Scan to computer (computername)" sends a scan of a document to the selected computer. It does not print the file on paper.

The software allows you to choose a default action for the scan, a destination folder, or to open the file with a suitable application. It should open a "Windows Explorer" dialog with a directory location to save the file. Check the computer's "Documents" folder if you do not see the Explorer window.

I know what "scan to computer" is.  But my question is not about that.  It is "scan to print".
