I am really struggling with setting up my scan to email. There is no option available to choose from and I have tried on the app and via the IP address

According to the documentation, the OfficeJet Pro 8120e series supports Digital Send features:

How to set up ‘Scan to Email’ on HP Color LaserJet Pro & HP OfficeJet Pro printers
Open your Browser > Type / enter the Printer IP address into URL / Address bar
1) Section General > Email Servers
And, next
2) Section Scan > Scan to Email
Example - Scan to Email - EWS > General > Email Servers Setup / Scan > Scan to Email Defaults

That is where I found the one I posted - yes, I noted it and others are for the LaserJet.
