Product: HP Officejet Pro 8600
Service: Scan-to-Email
I seem to be having issues with my printers scan-to-email service, it worked well for years, but after a firmware update installed toward end of last year, I am no longer able to successfully setup outgoing email profiles.
The only profile which tests successfully, is an email profile that remained setup before the firmware update, which is an att.net email address. I tried using different SMTP outgoing server settings for different iCloud, Outlook, and Yahoo email addresses, all of which fail during the printer’s test run.
Any advice or suggestions would be greatly appreciated .

Welcome to the HP Community --
There are several models in this series - a couple of them do support SMTP Scan to Email setup and Profile management.
The general User Guide explains the basics and mentions the SMTP setup.

Although I cannot explain the connection to a firmware update, the general error mechanism when the Test and Server check both fail is a result of a change in the email provider's security settings (requirements).
Google was the first to disable "Less Secure Apps" -- several other email providers have followed suit, including Yahoo, Microsoft, and others.
The loss of the "Less Secure Apps" setup means that the (provider's) email security might require 2-Step verification to use the email account with any "third party application".
"Scan to Email" counts as a "third party app".
How to fix?
Log into your email provider's security > switch on 2-Step verification
Next, Create an App Password for Mail
Use the App Password in place of your normal password when you edit / set up your Scan to Email Profile.

Scan to Email – Two-Step Verification and Application Password
Email Account Security
"Scan to Email", "HP Scan > Email" and "Share" are subject to your Email provider's security that governs how your email account interacts with "third party software / apps".
For example, Google (G-Mail) and other email providers, including (and not limited to) Apple, Microsoft, and Yahoo, might -- or currently - require that you enable 2-Step Verification AND create and use an App Password to interact with the printer software, printer applications, or any program that requires that software to access your email account.
Where the email provider's security requires it, the App Password is used in place of your normal email password in "third party" apps and software.

- Follow the instructions to enter the App Password. The App Password is the 16-character code in the yellow bar on your device.

Tip: Most of the time, you’ll only have to enter an App Password once per app or device, so don’t worry about memorizing it.
Assign / set that new App Password in your Scan to Email profile as the password.
