Product: HP OfficeJet Pro 7740 Wide Format All-in-One Printer

Hello all,
I'd posted previously about getting an OfficeJet Pro 7740 to work on Windows Server 2019. The solution posted (extract the driver and install manually) worked for a few weeks, but then stopped. Now, nothing I do is allowing this printer to work on my server.
Before, when the server was running the driver titled "HP OfficeJet Pro 7740" it seemed to work, but now it's on "HP OfficeJet Pro 7740 PCL-3" and when it prints, it just prints page after page of weird symbols/characters.
I would really like to get this printer working, if anyone has any other solutions that has worked for them, please let me know.
