Try updating mac and printer firmware
To update the printer's firmware, refer - HP Printers - Updating or Upgrading Printer Firmware
To update Mac, try these steps - How to update the software on your Mac
Uninstall the printer software -
1. Click Finder in the Dock.
2. In the menu bar, click Go, click Applications, and then open the HP or Hewlett Packard folder.
a) If HP Uninstaller is in the folder, double click it, and then follow the on-screen instructions to uninstall the software.
b) If HP Uninstaller is not in the folder, continue to the next step.
3. Click and drag the HP or Hewlett Packard folder to the Trash icon in the Dock.
4. In the menu bar, click Go, click Go to Folder, type /Library/Printers, then click Go.
The Printers folder opens.
5. Click and drag the HP or Hewlett Packard folder to the Trash icon in the Dock.
6. Restart the Mac.
7. Right-click or Ctrl + click the Trash icon, and then select Empty Trash.
Install HP Easy Start and complete the setup and then try printing.
You may also add the AirPrint printer to the Mac printer queue
Add the AirPrint printer to the Mac printer queue
Confirm you are using AirPrint by adding the printer in System Preferences.
- Click the Apple menu, click System Preferences, and then click Print & Scan or Printers & Scanners.
- Check if your printer name displays in the Printers list, and then do one of the following steps.
- If your printer is listed, remove and re-add the printer to confirm it is set up for AirPrint. Click the printer name, click the minus sign "-" to delete the printer, click the plus sign "+"click Add Printer or Scanner, click the printer name and then continue to the next step.
- If your printer is not listed, click the plus sign, click Add Printer or Scanner, click the name of your printer, and then continue to the next step.
- Confirm AirPrint or Secure AirPrint displays in the Use or Print Using menu, and then click Add.
- Open a document or photo, click File, and then click Print.

I have the same problem in a brand new 13" MBP that Catalina and then upgraded to Big Sur. I used https://ftp.hp.com/pub/softlib/software12/HP_Quick_Start/osx/Applications/HP_Easy_Start.app.zip 2.10.0.201112, from 11/12/2020, to be able to get all features like scan and fax features since Apple's default AirPrint driver was very limited. However, HP printer works via AirPrint. Its USB doesn't want to print, but can scan. We need USB drivers! 😞

Uninstall HP Easy Start

- When prompted for Password, type in your system password
- You can also uninstall by opening HP Easy Start.
Download HP Easy Start and install the printer.
- Download HP Easy Start and follow the on-screen to complete the installation.

I am having problems accessing apps in both the printer and MacBook online. Printer doesn't connect to net for its web apps. I tried to get firmware offline with https://support.hp.com/in-en/drivers/selfservice/hp-officejet-pro-8600-plus-e-all-in-one-printer-ser... but it only has Windows version. Where's the macOS version?

The firmware is for the printer you can install the update directly on the printer.

Navigate to the printer update feature. Menu names and icons vary by printer.

Printers with an ePrint button or icon: Touch or press the HP ePrint icon or button (

), touch or press Settings or Setup if necessary, then touch or press Product Update or Check Product Updates.

Printers with text-based menus: Select the Setup, Service, or Settings menu, select Preferences, Printer Maintenance, or Tools if necessary, then select Web Services, Printer Update, or LaserJet Update.

Like I said earlier, apps and printer won't connect to the server to enable its apps and services. I even tried resetting the network settings back to factory defaults to redo its wifi setup.
