Automatic updates ARE REQUIRED if and as long as you are on Instant Ink subscription, which is probably why the option is gray.
If you want to switch it off, you have to Unsubscribe from Instant Ink, and you might have to turn off Web Services.
If you're not on Instant Ink plans, you have to reset the printer, and then turn automatic updates off.

Reset the printer as a last resort.
You cannot disable auto updates if you also use the web services on your printer.
If you don't need web services, then disable them first, and then try disabling auto updates.
Below are instructions that work on Officejet Pro 8035 model. For 8035e, the steps may be a little different, but similar.
To disable web services:
1. Turn on your printer and for it to finish initialization.
2. Using the printer's touchscreen, swipe down from the top to open its menu.
3. Scroll down to Web Services and tap it to open their settings.
4. Turn off HP ePrint and also tap the Remove Web Services options; press Ok/continue to confirm your choice.
When done, using the touchscreen back arrow or home icon to return to the main options list.
Now to turn auto updates off:
1. On the main options list, scroll down to Printer Maintenance and tap it
2. Scroll down to Update The Printer and tap it.
3. A new list will open with option to switch from Auto updates.
4. Tap on Auto and from there choose your preferred option to change it.
If that doesn't work, then you'll try resetting the printer.
