when copying it always seems to copy in color   Like it wants to copy a photo

Welcome to the HP Community.

 

According to the  User Guide you can adjust the settings when using Copy.

Page 40

 

If the Copy options are not sufficient (not working / not "something you want"),

Use software / application on your computer > Scan and save the content to the computer.

 

Example:

HP Smart Windows lets you scan > optionally edit > then save / print / share the scanned content.

HP Scan (part of the Full Feature Software / full driver printer software) supports Scan and a variety of save options.
