Bring up your default printer and select printing preferences. In printing preferences select monochrome or black and white for the default.
If you want you can rename the printer and give it a name like monochrome.
You can then duplicate the printer and set different properties and give it a different name.
One printer you can have it named color and the other printer could be named monochrome that makes it easy to select when you just want to print in monochrome.

What that what you were looking for?
Many inkjets use a double pair of blank cartridges because black is required in mixing colors.
