This fix allowed me to set up a workaround, overriding default settings for word, There is still no two-sided box to check in the print window after doing this; like there is for Outlook, Powerpoint, Excel and Preview software. For that software, you can see the two-sided printing box and select or deselect. Even Google Chrome and Safari print windows shows the two-sided box.
This must be a software problem with the HP printer driver using Microsoft Word specifically. I tried Mac Air print and downloaded the HP printer software and tried that. Both had the problem unique to Microsoft word. No two-sided box option ever shows up for printing. Would be nice if HP fixed the problem and not leave this nuisance problem in place.

Hi,
This is not related to the HP driver, the print duplex option within the Copies & Pages menu is part of MS Word and how MS Word for Mac is designed, there is no difference if you use an HP driver, an AirPrint driver or any print driver by any other manufacturer for this purpose.
You may find the steps to Print on both sides of the paper with Word For Mac, those steps are provided by Microsoft, and as you can see a duplex printing option can be selected with the Layout tab:
