Due to failure that cannot be repaired, I dumped the OJ 6700. On HP Smart it's still present on my account and there is no way to remove it.
HP support shows the only one I actually have.

@carbal54, Welcome to the HP Support Community! I’m here to help.
I see that you are using an HP+ Smart account. I understand you are no longer using the old printer, however, as it was registered on your HP account before, it will remain on this app too.
It cannot be deleted. This app keeps track of all the printers you have owned. You may simply ignore it.

Welcome to the HP Community.
Check / remove unwanted device entries...
For example,
Open HP Smart Windows
Printer Settings > scroll down
Section Manage
Forget This Printer
OR, if the printer is showing as connected,
Open HP Smart Windows
Right-Click on the name of the connected printer > Forget this printer

NOTE: Does not include removing printer software or printer software "bits"
Depending on the type of HP Support Assistant you have installed,
Try / Consider
Remove Device from "software" version of HPSA (installed in Programs and Features)
Open HP Support Assistant
If you have not done so, sign into HPSA
Click on your Account icon (people icon with your name under the icon)
Peruse the list
Click "Edit this device" > Click "Remove this Device" >> Save
HP Support Assistant Application (Version 9.6.x and beyond)
Open HP Support Assistant
If you have not done so, Sign into the application
In the upper right corner, Click on your Account name icon
Open View Profile
Peruse the list.
Click the X in Blue Circle in the last column of the device information

Remove Device from HP Account Dashboard
If the printer is still present / listed in your HP Account Dashboard, you can remove the entry.
Open the main HP Account website,
HP Account - Login / Dashboard
Click and sign into your HP Account,
Click on your account name (upper right)
Switch to your Dashboard
Tab / Section My Devices
Device(s) listed in rows
Click the X in Blue Circle in the last column of the device information

Thanks for the quick answer. Unfortunately none of the suggested solutions worked. On HP Smart the 6700 is still there WITHOUT the possibility (available for the 9012 actually in use) to scroll the menu and chose "remove printer".
HP Support web site, on the other side, shows ONLY the 9012 actually in use.
Not a big problem, only annoying.

I don't speak Italian - my loss, I think.
If the printer is not in your HP Account and the printer is not in your HP Support Assistant,
then parts of it are still "somewhere" in your Windows 10 File System.
Where you remove the device depends on where you are seeing it.
Where are you seeing the unwanted (6700) printer?
That is, which program are you opening and "there it is"?

HP Smart opened through web browser Chrome: shows both the HP 6700 (dumped) and the HP 9012 (in use)
HP Smart installed on my Win 10 PC: shows both the HP 6700 (dumped) and the HP 9012 (in use) (already tried uninstall/install)
HP Support assistant installed on my Win 10 PC: shows only the HP 9012
https://support.hp.com/it-it opened through web browser Chrome: shows only the HP 9012 (in use)
Some crazy code line hidden somewere? 😜🙄😖😖 I will survive 👍

Remove any unwanted printer from HP Smart.
HP Smart Windows > Forget this printer
HP Smart Mobile > Remove Printer
I cannot comment on opening HP Smart in Chrome web browser.
I no longer use the Chrome browser and I've never seen HP Smart opened in any browser.
I would guess that the Chrome browser might be mistakenly listing printers that are no longer available.
That would be something to fix in the browser, I think.

Click on the offending printer / Identify the printer to be removed
Settings wheel
Add / Set UP a Printer
scroll down...
Remove Printer
OR (Optionally)

If the printer is showing as connected (Green Check Mark next to printer)
Open HP Smart Mobile
Click on the Green Check
scroll down...
Remove Printer

I really appreciate your willing to help, but, as you can see on the image above, for the 6700 there is NO down arrow on the right of Printer Options (Opzioni stampante in italian 😉), consequentially I have no access to the drop-down menu and no possibility to "forget" the printer. Same in HP Smart for mobile. Thanks again, I will simply avoid to came to this page 😉

If all else fails to get ride of the unwanted / not-connected printer,
If you have not done so,
Try / Consider
Uninstall HP Smart > Restart the computer and log in > Install the application from the Microsoft Store
Settings > Apps > Apps and Features
Search or scroll down and find HP Smart
Left-Click on the item > Uninstall
Optional >> If having continuing issues:
Restart the computer and log in
"Get" a new copy of the Application from the Microsoft Store
Reminder: You’ll need to sign in to the application with your HP Account credentials.

If it is going to work,
You have to first identify the printer in HP Smart (so you don't accidentally remove the printer you want to keep).
True, there are not "Printer Options" for a disconnected device.
What you see is not what I see on my HP Smart Windows application.
(I am not talking about the language difference, of course.)
Regional difference??
Can you identify / select the unwanted printer in the HP Smart application?
Open HP Smart
Click on the unwanted printer in HP Smart to identify it.
If that is successful,
Next,
Open the Tile: Printer Settings
scroll down
Section Manage
Forget This Printer

Oddly, this should not be that difficult to do.

I think there are a small misunderstanding. A part the language, the home screen of HP Smart that I see it's the same as your, with only one printer.
Where I see the Old 6700 and the new 9012 is on the account Dashboard

You are right - I don't speak Italian.
I do not recognize the program you are opening.
And, it doesn't look right to me based on the example and the instructions I provided in my first answer for Dashboard.
I don't think we are talking about the same Dashboard.
Perhaps you need to sign in to whatever page you are viewing.
Perhaps you are looking at something in HP+.
I don't have access to HP+.
I will have to pass this along and hope we hear back from someone who speaks the language and can figure out what you have opened (or why it is different).
I'll send this to Review.
