How to change default email address for a 9025e?

I'd like to change the default email address on my 9025e. Cant find any option for this. Just purchased this unit 2 days ago.
Any one know how to do this?

Open your Browser > Type / enter the Printer IP address into URL / Address bar

Tab Scan > Scan to Email > Settings / Scan to Email Setup

What if?

If you are asking  about changing the Printer's email address -- that's a different animal.

Print Anywhere -- the "replacement" for the old ePrint technology

IF the printer's email address could be changed...

That said...

If the printer is an HP+ service enabled printer, the printer's email address does not change (and should never be made public). 

Remote Print Jobs are sent directly to the printer using the HP Smart application and Print Anywhere

Yes, Print Anywhere is different from the old ePrint method.

When you first configure Print Anywhere, you -- as the owner -- can send jobs to the printer.

If you want to "add" another users, for example, friend, colleague, family member, you send that person an "Invite".

NOTE:  Print Anywhere is explained later in this message -- be sure to watch the Video.

What does Print Anywhere look like in an HP+ service enabled printer when signed into HP Smart / HP Connected?

How to "get to there from here"?

This is a discontinued model --

Did you purchase the printer new, sealed-in-original-box from an authorized online store (as opposed as purchasing used or from ... the back of a truck)?

What?

Purchase makes a difference -- Although HP does  not any longer sell this model (it's been replaced) -- it is likely that the printer's extra features will be honored including Warranty. 

AND

It is possible, too, that the HP+ service can be enabled -- and likely must be done to use Print Anywhere.

Why important?

If I understand the documentation, HP+ service must be activated to enable the use of Print Anywhere, that is the ability to send jobs directly to the printer using its assigned email address. 

HP is likely to honor HP+ setup if the printer is a new, in-box, validated purchase.

Consider whether you want Print Anywhere badly enough to sign up for HP+.

It's not a "bad" thing -- just make sure you understand the HP+ service requirements that are necessary to make use of the benefits.
