I've seen other threads about this such as this one:

https://h30434.www3.hp.com/t5/LaserJet-Printing/Bonjour-Service-Name-changes-unexpectedly-after-bein...

What happens is that I go into the web interface for the printer and navigate to Networking -> Network Identification -> Bonjour Service Name

There I change the name to what I want and click "Apply". The name reverts to the original name. I change the name again and click "Apply". Now the name changes and the printer shows up via Bonjour with the correct name.

After an hour or so the Bonjour name has for some reason reverts back to default name. 😞

Not sure why it does this. We also have another HP printer (HP Color LaserJet MFP E87640) on the same network and there the custom Bonjour name stays just fine.

Both printers are setup in a similar way network wise. TCP/IP (v6) is disabled and the IP address is set via TCP/IP (v4) manually.

I've also updated the firmware to the latest as of this writing (4.11.2.3 released in February 2022).

Any ideas?

Interestingly enough, since I posted my concern about this the Bonjour name of the printer hasn't changed for several days!

Maybe the printer got scared or something and started to behave. 😀

No, but all seems fine for the moment. Not sure why it stays now, nothing changed network wise as far as I know.
