I have been scanning and it suddenly gave me a "scaning is currently unavailable" I unplugged, waited 60 seconds and plugged in and it started to scan. I scan one paper. Then I tried to scan another and I got "scanning is currently unavailable. I unpluggged waited and it started again.
I've done this several times. Now it won't go at all.

I see that you are facing scanning issues with HP Smart Tank Plus 551 Wireless All-In-One
I suggest you reinstall the driver and connect the printer to check if that fixes the issue.
You can follow the steps under this link to uninstall.
Furthermore, you can reinstall using HP Smart App from this link.
