I found a solution. HP owes me $20,000 in consulting fees, billable to Clickwidget computer consulting.
To print to a LaserJet 3600 or 2600 from a newer Mac using 10.6, you must do the following:
Step 1: Install Foomatic HPIJS drivers
Step 2: Get an AirPort Express or equivalent print server (AirPort Extreme works as well, UFO or thin.)
Step 3: Connect the printer via USB to the print server, and connect
Step 4: Go to Print & Fax, then click the + button to add a printer
Step 5: Select HP Jetdirect - Socket for the protocol
Step 6: Enter the IP address of the printer server, followed by a colon and the port number (9100 or 9101)*, i.e. 1.2.3.4:9100
Step 7: Name the printer, then click on the Print using: drop down menu
Step 8: Select the Select Other Printer..., and choose the appropriate HPIJS driver.
* To determine the correct port, open Network Utility in the Utilities folder. Click on Port Scan. Type the IP address of your print server, then check the Only test ports between... and enter 9100 and 9101. It will report back the open TCP port.

Fantastic, this also solve my problems for my cp2025n with Mac OS10.6. Printing large files with pictures was so slow that it took 30 minutes to print one page. With this tip printing time was brought to less then a minute.

See deving 280 post on page 2 re open source drivers.
Tried his open source driver idea and eventually got the P2055dn working properly with Leopard.
NB - Follow the instructions and then use the open-source driver instead of the HP one.
Will report back if any problems arise.

I can't find my model (2600n) in the print driver list.
How does one find the IP for the printer? When I print out the network configuration from the printer it has: 0.0.0.0
How does one find the IP for Airport Express?

Using open-source driver can now print double-sided landscape Quark documents.
But the driver refuses to print many other Quark documents.
Not very satisfactory for me; but the idea might work for some others who are having problems with their printers on Leopard and Snow Lpd.

I think I've got it sorted.
Ignore yesterday's post; there were other problems that driver didn't solve ...
But now -
I downloaded the Gutenprint driver and that works properly. Tested it last night for a good (if tedious) hour.
They didn't have one for the p2055dn, so I tried the driver for the machine it replaced (the p2015dn).
I attach the list of drivers available - if you're having problems with Leopard and your printer (any sort), then this might help.
Worth a try, anyway.

Everybody, listen up: If you're running 10.6, download the HP Printer Drivers v.2.5.2 for Mac OS X v10.6 from Apple. This will effectively fix the printing issues. You should no longer need to use the HPIJS & Airport solution I provided earlier.
If you're having problems seeing the printer over Bonjour, make sure you're on the same subnet. If the printer is plugged into an Apple Airport, powercycle the Airport.
