Hi,
The HP Scan software rovided with your printer cannot perform a such, its scan software only support a single scan size for a scan job.
As a workaround to meet your needs, ownload and use HP Scan Extended instead:
http://ftp.hp.com/pub/scanners/HPScanExt/HPScanExt.msi
Once completing the installation open HP Scan Extended (Start > All Apps > HP > HP Scan Extended)
Select PDF, select the Page Size of the first page and ensure that "Show Viewer after Scan" is checked, then press Scan.
Click the Plus sign to scan the next page, you may then change the Page Size within the right pane for any scanned page.
Once you are done press the save button to complete the scan.
