Hey there,
One thing before you start, this solution will only work for Inkjet printers (HP one's ofcourse)
Try the following step's, i believe it will help you overcome the issue.
1.Start by dissconnecting the USB cable.(If its connecetd wireleslly, skip to the next step)
2.Remove the Printer Driver from the "Devices and printer's" which can be found in the control panel.
3.Download the full solution for your printer.
4.Extract the contents from within the file.(By using winrar or any other method you know)
5.Open up the "Utils" Folder and within choose the "x64" (or the "x32" incase you are using that system type) folder, Inside you should be able to spot a File called "RemovePreInstalledDrivers" >> After you will open that file a Black screen will open, Wait for it to close then move to the next step.
6. Go back to main folder where you have already extracted the software and Right click on the x64.msi file (Name will most likely consist your printer model) and choose the "Repair" Option. >>Afterwards you will be prompted to preformed a restart. (Incase you will get a Messege saying "This action is only valid for products that are currently installed" Just double click the file instead)
7.After the restart, Head into Local Disk C/ProgramFiles/HP/PrinterModelFolder/bin/USBSetupLuncher (Or DeviceSetupLuncher if its Connected wirellesly) and double click it.
8.Follow the steps shown to you and connect the USB cable when you are asked to. (If its wireless just choose the Wireless option)
That should add the scanner to Your imaging devices.
Best Of luck~

Thank you JohnGPB. While you were typing this reply I was able to add the printer as a (Copy 1) of the original and get the scanner option by connecting with the USB cable and the HPPSCND.inf but frankly I just stumbled through it. I can now see it as a scanning device in the OS, MSPaint.exe, and the HP software.
As a suggestion to others too, there is free scanning software from the Microsoft store that is a little less cumbersome also. You don't get much editing power it looks like but you can use whatever your favorite application is after that. I am just thankful to be able to scan again!
John, I will try your method next as my wifes computer will have to be done. Thank you for the quick reply.
