I've had a similar problem with duplex scanning when using the Officejet Pro 8620. I use a Mac running OS X 10.10.5 and the problem was the standard HP driver installed from the website when setting up the machine.
To resolve the problem go to this link: https://support.apple.com/kb/dl907?locale=en_US and download/install HP Printer Driver v3.1 for OS X.
To use the new driver it's easiest to just add a new printer from System Preferences like so:
1.Go to System Preferences/Printers & Scanners and click the '+' icon in the bottom left corner of the Printers window on the left.
2. Select your printer from the dropdown list and rename it (I've used Home Printer 2), select 'HP Officejet Pro 8620 e-All-in-One' as the driver in the 'Use:' box and click 'Add'.
3. You'll then see the new printer (using the new driver) and your old one. Select the new printer in the 'Default printer:' box and you're ready to go. If you wish you can delete the old printer (select it and click the '-' tab) and rename the new one before leaving this screen.
4. Now open up HP Easy Scan and you'll see this window. Click on 'Presets: General Pupose' dropdown box.
5. You'll see this box where you need to select 'Type: Automatic'.
6. Select 'Document' from the list and you'll notice there is now a check box next to 'Scan both sides of page' that you can tick.
7. It's a good idea to save these settings as a preset for two sided scanning next time. To do this click on the Gear Cog arrow at the top to the right of the 'Presets: Documents with Color' box.
8. Give this preset a name and click 'OK'.
9. You can now click 'Done'.
10. You'll now be able to select this preset from the Home screen.
11. You can now scan a multi-page document from the document feeder in one go.
12. You'll notice the duplex feature is not available when selecting 'Picture' from the dropdown as I believe for higher quality you should load the picture directly onto the flatbed? However, I've found the quality of scan perfectly satisfactory when using the document feeder for general purpose items and this saves a lot of time when scanning a multi-page 2-sided document.
13. Once you've scanned your multi-page document you can change the page order by simply dragging the pages on the left of the screen into the correct order. You can also Rotate and Edit the scanned images before saving by clicking on the tabs at the bottom right of the screen.
14. When you're finished click on 'Send' and select 'Folder' to save to your computer or 'Printer' to print the document. I want to save as a PDF multi-page document so I select 'Folder'.
15. Give your document a name, choose the destination folder and then select 'PDF' from the 'Format:' dropdown box. Make sure you tick the 'Save all items to a single file' and click 'Save'.
16. If you need to send your document by email it may be worth adjusting the 'Quality' slidebar away from 'Best' to reduce the filesize of the saved document.

Sorry, I don't know how to start a new message that YOU can read. Your feedback on duplex scan and printing was very helpful -- I thought this machine would do it as it is advertised like that... 😞
You seem to know a lot about HP so could you please tell me if the hp8610 can be set up to imperial/English measurements as I have no idea how many cms is an 8.5x11 page for example.

What paper size do you WANT to use by default?
My 8620, which probably has similar setup facilities to the 8610’s, can be “set up” to use various paper sizes by default. But as there are different paper size measurement systems in use throughout the world, the choices it offers are described in terms of those paper sizes: for example,
- A4 (210 x 297 mm, or 8.27 in × 11.7 inches), or
- Letter (8.5 by 11 inches, or 215.9 mm x 279.4 mm).
So, really, to make effective use of a paper-handling device like this, one simply has to learn a little bit about paper sizes and measurements, and how to translate them. You can always translate sizes by remembering that inches times 25.4 = millimetres, and millimetres divided by 25.4 = inches: so
- 8.5 inches = 215.9 mm (8.5 x 25.4) ,
- 11 inches = 279.4 mm (11 x 25.4),
- 210 mm = 8.27 inches (210 / 25.4), and
- 297 mm = 11.69 inches (297 / 25.4).

Thanks, Patrick London for your information. However, I don't want to have to be thinking and calculating which paper is 8.5x11. The machine should be able to do that for me, otherwise, I really don't want it.
By the way, there are LOTS of differences between the 8610 and 8620. So the 8610 I have has no option to change the paper to default imperial sizes.
On the other hand, I purchased an 8620 but exchanged because I read reviews where it said it did not print on American size paper, only European, and for example size 9 envelope when we use the #10 envelop.
I guess it was a bad decision. Too confusing for non-techy users like me.

I wouldn't believe everything you read in reviews; there are better reviewers, and there are worse ones.
According to the official HP site, both models (8610 and 8620) support the same paper sizes, including A4 and US Letter; and both support the US 10 envelope: click the headings Paper-handling specifications, then Supported paper sizes and Supported envelopes, on this page.
If you are in the USA, I suspect your device's default, as-first-installed setup is for US Letter size, so you probably wouldn't go far wrong just putting a stack of this paper in your paper tray and telling the thing to print (or copy, etc). US Letter and ISO A4 sizes are rather similar anyway, and many printers (and a lot of software) will automatically take care of either, whichever is in the paper tray.
I do think it might be worth your having another look at your installed printer settings and roaming around the screens to see if you can find something similar to the illustration I posted. I don't have an 8610 and I can't install the driver software fully for it without having one to connect to, so regrettably, I don't think I can offer further help on this one. Maybe someone else who has an 8610, can.

I had an 8600 and I would never have purchased this printer, the 8610, if I knew it would not scan duplex from the auto feeder. THought a step up would be good. This printer is far worse and a great disappointment for my daily bisness needs.

- The 8620 certainly does: I can say that from my personal ownership experience of it.
- The 8630 also does, according to HP's statement in this document: "... Breeze through multipage documents with automatic two-sided scanning and the 50-page auto document feeder (for 8620/8630 only)."
- For completeness, and as stated previously: the 8610 does not.
