I just bought a used 8720 pro.

The black cartridge and one of 3 colour cartridges are empty. Before buying cartridges I would like to know if this printer will continue to print in black and white when a color cartridge is empty?

No, the printer cannot print with any empty ink cartridge, which must be replaced to resume printing:
