So, I've downloaded the driver for Catalina here
First, of all how can I completely remove the old non working driver?
Second, how do I install the new downloaded one?
I see this... no instructions etc...

Hello,
You need to go to the Library Folder and manually remove the drivers.
Double-click on the hard drive icon on the Mac desktop.
Double-click on the [Library] folder, double-click on the [Printers] folder, // Copy pasted from other site, but this should be correct. Not sure if they changed it.
And, I think it's the PPD Folder where you will find the specific driver. But also, maybe check if HP/Samsung folder exist.
If you have used Airprint, then it won't show in the list. Only for PCL drivers installed from e.g Easy Start // Samsung Installation will be listed.
Edit: In worst case scenario I think you can edit it all in CUPS, but def try to manually remove then install the drivers to check.

Ok,
So, do you find a Samsung Folder there? You can look in the PPD folder for the printer name, and then basically throw it to the trashcan to uninstall it.
Edit: Sorry it's PPDs >> Contents >> Resources, then delete [model name].gz or CUPS.gz
So to be precise, it's Computer >> Macintosh HD >> Library >> Printers >> PPDs >> Contents >> Resources
And to properly install Samsung on Mac, First click on ICDM Folder, and install the scanner. Don't add any printer yet.
Then click on Printer folder, to install the Driver itself, then add new Printer. Both should be .pkg files.
