8130e scan to email settings -- how do i change the default?

We just got a 8130e series printer that we use to mainly scan to email on. Is there a way to change the default settings for scan to email to grayscale from color? we have to change it every time we scan due to the amount of pages we are scanning to make the file size smaller. I've checked my app and logged into the EWS. the EWS only gives me options web scan and scan to usb but not scan to email. I've looked on the printer itself and can't find anything. I 'm super stumped and frustrated trying to figure this out. Surely there's got to be a way to change them right???

Scan to Email; Scan to USB; Scan to Computer

EWS format is different on this newer printer model series --

First,

Scan to Email for SMTP / Profile setup is completed in Section General > Email Servers

Next,

Defaults are set up in Section Scan > Scan to Email

Open your Browser > Type / enter the Printer IP address into URL / Address bar

1)  Section General > Email Servers

2)  Section Scan > Scan to Email
