Cannot set destination folder for scans

I cannot find any way to reset the default Destination folder on my PC when scanning on the HP OfficeJet Pro 6978. Everything currently goes to "Documents", which is not what I want. I have tried every option on the 6978's embedded software, updated the firmware, installed HP Smart, also the full packaged software, HP Print & Scan, tried to find HP Scan based on one post, tried to find HP Easy Scan software, reinstalled software, reset to factory default 2X, run the HP Print & Scan repair software, tried changing the printer settings in Windows 10 Control Panel, and followed multiple internet thread instructions to no avail. Instructions typically say, "use the 6970 software" (but never specify what software, and HP seems to have produced multiple legacy scanning apps that overlap in function). I have never found a 'Destination' button under any form of "Advanced Settings" section as mentioned on threads. None of the multiple official software apps listed under the HP Support page for this product seem to have the ability to perform this simple configuration. This simple task just should not be that hard to do. The HP software is too simpleminded, confusing, and unintuitive. Would appreciate any  help. Thanks.

"Advanced" sounds like something you'd find in the Printer Software > Printing Preferences.

Regardless, there is a solution for using HP Scan and setting the Destination folder.

Preparation...

Printer Software

If you have not done so, download-save-install the Full Feature Software / Full Driver for the printer

Full Driver / Full Feature Software does not require a sign-in to use the software.

Download - save - run

 HP Easy Start

• Download-and-Save the printer software (Full Feature Software / HP Smart / Easy Start)
• Right-Click on the downloaded package and "Run as Administrator" to start the installation
• Reminder:  If using Easy Start, select the Full Driver

About 2/3 of the way through the setup, you will be given the opportunity to select the software - select the "Full Driver" set (as opposed to the basic driver).

You can Skip any suggestion that you add the HP Account – you’ll need the account at some point, but you can skip this suggestion (as many times as it insists it’s a good idea) during the full driver software installation.  (

Side Bar: HP Smart requires that HP Account sign-in but HP Smart is NOT the same thing as the Full Feature Software / Full Driver.

If you see it, you can skip any suggestion regarding Instant Ink subscription.

Stay focused and the Driver will install.

If using USB:  Connect the cable when instructed to do so (near the last part of the driver installation)

After the software is installed, Restart the computer and log in.

Full driver provides print and scan functions supported by your printer.

HP Scan setup / use is similar for both PDF and Image (with the obvious differences for file type).

Open HP Scan

HP Scan provides the folder "save" setting in More > Destination

• Download-Save-Install   HP Scan and Capture

Click Start (windows key) > Open the All Apps List > scroll the list 

Open Category HP

Find and open the HP Scan and Capture application

Right-Click on the application and PIN to Start

Thank you for the detailed answer, most appreciated. I'll try your suggestions. The only thing I want to mention is that I did try the "HP Scan and Capture" app, and even though it does offer the two options of changing the Default folders for Scan and Fax, neither of those "stuck." After making the selection of a new default folder in this app, the scans would always end up regardless in the system default of "Documents."
