In the EWS setup page there are 2 options for setting up scan to email, 'Outgoing Email Settings', and 'Outgoing Email Profiles' . I have a working setup in Profile, I have a faulty setup in Settings. They both show up on the printer. I would like to delete the faulty one so it will not confuse the non-tech savvy users. I can't seem to figure out how to do this on the EWS page or on the printer.

Hi,
You have an Outgoing Email Settings section at the top of the page, for that section once it is configured the settings can only be changed and not removed from this section, unless restoring the factory defaults and reconfiguration the printer (for such this would be crucial to know your usage, cloud services as Instant Ink might be affected from such option so please clarify your usage first), so you can always edit this section settings as required, from the bottom Outgoing Email Profiles however you may remove any created profile using the remove option, and only keep the top section configured.
