I have an Officejet 4500 G10a with the same exact problem! UGH! So frustrating. I have done everything suggested on here and it has the same results - the scanner does not work like it did before! Come on HP get your act together! People buy your products to be able to use them!
On my Mac if I go to the Printers/Scanners under System Preferences and double click on it, it brings up my printers. I can click on the HP OJ 4500 one and select it, it does show a "Print/Scan" option ABOVE the bolded name of the printer. I can select "Scan" on there. When I select "Scan", it shows a button BELOW the bolded name of the printer; "Open Scanner".  I click on that and it brings up the scanner with 9 choices of where to put the file (be careful and remember what you select because this is where your scan file will be), you can select "letter size", then whether or not to "show details" (I do not have this selected). And then the last button is the scan button. If it names the image "Scan 1", "Scan 2", etc. then it has saved the Scan. Hallelujuah! If not you will need to press the Scan button again. It's not ideal but it does work on Macbook with OS Sierra. Hope this helps!

It appears that the driver has been updated.  I went into system preferences on my Mac tonight, selected my printer and did a right click on my mouse for "reset" printer, and then reinstalled the printer driver.  The scanning option now shows up the way it used too.  I had tried this several times before the end of the year to no avail, but noticed that a new version of the driver was available for my windows pc, so I thought I check my Mac as well.

Good luck.

So I just did what you said and now I have NO printers on my computer at all! What the heck??

Hit the add printer button, which is the plus sign in the printer settings screen, and it will reinstall the driver. Full functionality, including scanning, should be restored. It will automatically install the latest version of the driver.

Me too! Thanks for the tip that they had updated the driver. I wish that HP had pushed it rather than having to rely on another user to provide the information. Thank you very much
