how can I delete an email address from the phone book during the scan?

I think I do not fully understand the question; I will try to answer.

I do not believe you can edit the phone book during the scan process - if you can do so, the timing would be tricky to edit the the address book and delete the entry from the book at the same time you are using the scan program.

If you are using the Scan software on the computer, after you set up the scan (add paper to printer glass / adf), but before you click "Send to Email" or "Scan", open the mail program you use with the scan setup > Open the Address Book > Add / edit / Remove an address from your address book.  Back in the scan program, click "Scan" to invoke the scan process and open the program used to mail the content to the recipient(s), Add the recipients to the list of those who should receive the email with the attached scan.

For example,

Open Outlook on your computer > Edit the phone book > Close the phone book with any changes

NOTE: that Outlook can remain open after the address book is updated, though the edits to the Address book should be completed before you scan and open the mail within the scan program.

Set up the scan process, select "Send to Email", set all options, Click scan

Add recipients to mail and send

OR

You can edit the recipient list once the address(es) have been added to the mail program used with the scan-to-email setup.

If the feature is supported on your printer, add / edit / add Scan-to-Email addresses in the Embedded Web Server.
