I have a client with Office 2016 and Incredimail on her computer. Incredimail is deprecated and no longer used. Outlook 2016 is set as the default Email program. For a while, HP Scan will 'scan to email' and use Outlook, but after a bit it drops back to Incredimail. There's no way I've found, short of uninstalling and re-installing HP Scan to get the situation resolved. Looked for UDs to Outlook/Office and Win 10 generally (it's Pro 64) but everything is up to date (DISM, SFC come up clean) and of course there doesn't seem to be a way to force HP Scan to select one mail program over another. Anyone have any ideas?

I can give you a couple of places to look / check.
Start...
Check to ensure offending email is not infiltrating the Scan to Email setup in the Embedded Web Server (EWS).
This is not likely - it takes only a couple of minutes to check...
Open your favorite browser > type / enter Printer IP address into URL / Address bar
Tab Scan > Scan to Email > Settings / Scan to Email Setup
Example - OfficeJet 8740 - EWS - Scan to Email
Setup / Profile(s) - Adding / Testing / Editing
EWS_8740_Scan-to-Email_Setup_7C
Newer Model OfficeJet 9025 - very similar - includes the address book setup for this model

If the Incredimail software is still installed on the computer as a Mail client, it might sneak back in.
Check both Programs and Features and Settings > Apps > Apps and Features to make sure the Incredimail client / software is not lurking somewhere. If you find it, uninstall > Restart the computer and log in
Next...
Settings > Apps > Default Apps
Scroll through the list of apps
Set the main Mail client as Windows Mail
In general, this won't impact the installation or operation of Outlook plus the setting means you (customer) to use HP Smart to Scan-to-Email as long as the preferred "sending" mail address (somebody @ FancyMail.com) has been added to Windows Mail.

HP Scan Example > Email as PDF > More > Destination > Mail clients
Open HP Scan
Select Email as PDF (or JPEG)
Change at least one of the options in the main menu or in one of the sub-menus
Select More > Destination
Make sure the client is Outlook
Optional > Add "Save a local copy"
Check other Settings (Scan / Image / Document)
Click OK if any changes are made in a sub-menu
Return to Main menu (< Less )
Save-As to create a custom shortcut

Will this work?
Maybe - it has potential to at least eliminate some of the places where the setup can fail.
