I just purchased an HP OfficeJet Pro 8025e. When I use the HP Scan program, it opens at a very small resolution, which is very difficult to read. With my previous HP Printer, an HP OfficeJet Pro 8600, I never had this problem. I am running Windows 11 installed on an Hp Spectre x360. Is there a way to fix this problem?

"Small" is generally relative to "size" and is not always descriptive of "resolution".
That said, I think you mean the HP Scan menu is displaying on your screen much smaller than you expect.
Resolution might be described as "low" to "high" to "very high" (UHD).
Examples
Low 1024 x 768
High 1920 x 1080
Very High / UHD 3840 by 2160

Check the Display on your Computer
What is the Display resolution on your computer?
What is the "Scale" (percentage of 100%)?
Find that information:
Settings > System
Scroll down to section "Scale and Layout"
Check the setting for "Scale"
Check the setting for "Display resolution"

What if?
If your display resolution is UHD / very high / 4K (or similarly described),
then
It is likely that HP Scan cannot display properly due to limitations in the HP Scan program (code) that controls the GUI (Graphic User Interface).
The GUI is the part of the program you see on your screen.
If the screen resolution is higher than the program can handle,
The program will display on your screen at a very small size compared to the rest of the displayed objects.
All Fancy words that - if true - mean the HP Scan program does not like your "very high" resolution screen and cannot display on your computer screen the way you expect.

What to do?
Ideas...
- Increase the "Scale" setting in your Display and see if that helps (might or might not). For example, set the "Scale" to 125% or higher.

- Use the in-built Magnifier in Windows to increase the size of the HP Scan Menu.

- Use a program other than HP Scan to scan content.
For example,
Both the HP Smart and HP Scan and Capture application menus can be made larger.
Click and drag the lower right corner of the menu to make it larger
