On my personal Windows 10 PC I run the wonderful* HPScan which lets me set up and choose from preset options, such as type of file, separate pages or one file, save location, etc. On my work PC I only have the execrable HP Scan and Capture, which, although prettier is far less functional. Is there any way to get hold of HP Scan? Or any chance the functionality in it will ever appear in Scan & Capture?
Alternatively, HP Smart would seem to be able to do something similar, but it doesn't support saving to different folders on the local PC, and fails when I try to set up to save to Evernote.
*It's not really wonderful, except in comparison with Scan & Capture. Which bizarrely is described as "fun" in the Microsoft Store.

Welcome to the HP Support Community.
Let's try to do a root uninstall and reinstall of the software:
Unplug any USB cable, if any, before doing this.
1.) In Windows, search for and open Programs and features
2.) Select your HP Printer
3.) Select Uninstall
4.) In Windows, search for and open Devices and printers
5.) In the Devices and Printers windows look for your HP printer. If you see it listed right-click on it and choose 'Delete' or 'Remove Device'
6.) Open up the run command with the "Windows key + R" key combo.
7.) Type printui.exe /s and click Ok. (Note: there is a space in between “printui.exe” and “/s”)
8.) Click on the "Drivers" tab
9.) Look for HP Printer driver. If you see it Click on it and click Remove at the bottom
10.) Select Ok
11.) Select Apply and Ok on the Print Server Properties windows
12.) Close Devices and Printers
13.) Open up the run command with the "Windows key + R" key combo
14.) Type c:/programdata and click Ok. Go to Hewlett Packard folder, remove any printer related folders & files.
15.) Restart the computer.

Must say I'm a little reluctant to go through all that just to install one fairly small piece of software. It does seem like overkill. But I may still try, if you can guarantee that I will get back HP Scan.

I decided I'm not going to go through all that just because HP doesn't HPScan downloadable. From past experience, it will lose all my settings, create a new printer on my PC and take a non-trivial chunk of time. I'll put up with the inferior solution.
Every time I say to myself "don't buy HP, the products are good, but they insist on making the installation and maintenance harder than necessary", but I still do it...
