How can I set default directory for scanning documents?

The Full Driver printer software includes HP Scan.

HP Scan can change / edit the Destination folder

Example HP Scan - PDF - Destination

HP Smart - Windows - does not have an inbuilt "Change Destination Default" but does let you select the destination folder during each job run.

HP Smart - Shortcuts - Save to Cloud account -

The Cloud Save option supports selecting the default sub-folder used to save the scanned content.

Using HP Smart Shortcuts requires that all the settings be built into the Shortcut -

Built-in settings include the type of content, the destination (cannot be changed on the fly),  and other job setup details appropriate for the particular Shortcut task type.
