I want to put a scanner icon only (not the printer) in my toolbar.

Hi,

from your Applications folder open HP Easy Scan, it will open in the dock.

 

Right-click its icon and select Options > Keep in Dock.

 

If HP Easy Scan is missing under your Applications  or under Applications\HP, you may install it below:

https://itunes.apple.com/us/app/hp-easy-scan/id967004861?mt=12
