Product: HP Officejet Pro 6978 All-in One
Operating System: Microsoft Windows 10 (64-bit)
When I scan 100 plus pages at 200 dpi the file size is 50 or 60mb. To large to email. So I use Adobe send to send via email. But is there a setting to compress the file size down on this scanner?

There are few options:
- split big files to few smaller files. Many email providers only allow around 20MB max for each email therefore you can split 60MB to 4 files
- send thru other service, some services allow you to store big files in few days or much longer
- ...
Solutions
For 1. Please download and install the following free software. It allows you to slit one big PDF file to many smaller files, for example you can split a 500-page book to each chapter.
