I ran into exactly this issue with an HP Color LaserJet Pro MFP M277dw scanning to a Synology DiskStation – every scan overwrites the same file regardless of the prefixset in the EWS. After digging into it: this looks like a confirmed HP bug, the automaticnumbering doesn't work reliably against NAS shares (it works fine against a plain Windows share), and HP never shipped a firmware fix for it.
What's working reliably for me: a small shell script on the DiskStation watches the scan folder every second and renames each newly arrived file with a uniquetimestamp before the next scan can overwrite it. Runs as a boot-triggered task in the Task Scheduler, no extra software needed. Happy to post the script here if anyonewants it.
