In this help document we have a very detailed description of how to set the default folder on the network for scanning:

But when I go to the control panel (EWS) under the system tab, I don't have the possibility to set or change the destination network folder:
The printer/scanner is conncted to the network at our school through the LAN socket (not the built in wi-fi) but that should'nt make any difference I think?

Hi,
Please see the intro of the help document:
This document is for HP LaserJet Pro MFP M130fw and M132fw printers.
The document is not intended for your printer, teh M130nw is a different model, no scanning to a network folder capabiities are available for your model, a such are only offered for a touchscreen modes of the M130 series..
You would need to scan using hte HP Scan software to scan from your scanner, a such must be initiated from the computer and not from the printer itself.
