How can I use the IRIS OCR? I don't appear to be able to see it as an option on my system. I have reinstalled the software for my 7500a printer but the option still does not appear.

I checked - I do not see any indication this printer came with IRIS OCR software.
Regardless, you are correct - IRIS software is not listed in Software and drivers for HP Officejet 7500A Wide Format e-All-in-One Printer series - E910
If the software came with any other "built-in" OCR software, the feature was recently removed (by HP) from the installation package (June 2022). No, I don't know why.
IRIS comes (or at least used to be included) with certain printers.
When the software is / was included at purchase, a single-user license typical of the type would be included.
As far as I can tell - IRIS is generally not "Free" OCR .

NAPS2 – “Not Another PDF Scanner” (Free – Donations gladly accepted by the NAPS2 organization)
- Download-Save-Install > NAPS2
- Not another PDF Scanner – free program scans PDF files and image(s) as .jpeg or PDF file(s).
- Not always simple “Plug and Play”, nonetheless, this free software is powerful and configurable.
Notes
- Includes an OCR feature – may need Ghostscript add-on (See NAPS2 forum entry)

- Combining files? Read the Command Line Usage guide > Select Combining and Converting Files

Thanks for your help Dragon-Fur. My 7500a printer is quite a few years old and did come with the OCR software. Unfortunately I cannot find the original disk with the software. I shall try something else. Thanks again.

You are welcome.
It is possible, of course, that the IRIS software was included in the original setup for your printer.
Just because I didn't find reference to it does not mean it was not there.
I was not aware that even if the standard OCR software is no longer available in the full driver that IRIS would be removed .
(I still have IRIS on a much newer printer after the standard OCR was removed from the full driver.)
It might be the case that the printer is old enough that any original IRIS software could not be updated so it was removed. I don't have anything old enough to test that hypothesis so the idea could be complete rubbish. ?
There are other perhaps options, fortunately.
Hopefully, you will find something that will work.
