I had this issue saving to a shared folder. I resolved it by disabling SMBv3 and SMBv2 on the HP device.
The option is under "Network > SMB".
It's amazing how useless HP support are on this.

Thanks! Turning off SMB v2 and SMB v3 worked for me as well! Under the 8720 Embedded Web Server, Network, Advanced Settings, SMB, uncheck the SMB v2 and SMB v3 options. I also had to select "Always use the following credentials" on the Login Authentication Option of Scan to Network Folder Setup with the appropriate user name and password entered (even if the password is blank). If I selected "Use credentials of the user currently signed in", I would always get a blue screen on the 8720 and a printer error while the pdf file is being saved. Strange ... At least it works now with the appropriate options selected. The HP Scan software would always work fine from the PC, but it's nice to be able to prompt a scan to network folder from the 8720 again. This is with the current WMP1CN1828AR firmware.

As of yesterday I'm having the exact same problem. Was going to post a request for help but based on this thread it appears that would be futile. Any recommendations as to the best sledgehammer to use on an HP MF printer? (MF has a new meaning now).

My HP 8720 OfficeJet has been working correctly for the past several months, since I disabled SMB v2 and SMB v3 in the OfficeJet's network advanced settings in the Embedded Web Server. Leaving only the SMB v1 box checked allowed my HP 8720 to "scan to network" properly after a recent firmware change. This may or may not apply to your OfficeJet model. Some OfficeJet models don't allow the user to change the SMB options in the EWS, so this may or may not work for you.
