My printer recently received an update.
After updating the shortcut screen reverted to factory defaults and I can no longer customize the shortcuts present there.
I used to be able to long-press and drag to remove items and to add items. Now long-pressing does not do anything.
If you'll look at my post history this happened to me in the past after an update. The solution mentioned in that previous post no longer seems to work.
How do I prevent this from happening on future updates?

@dmwyatt, welcome to HP Support Community!
First, try performing a hard reset on the printer-
To reset the printing mechanism, unplug the printer, wait, and then plug the printer in again.
-
Turn the printer on, if it is not already on.
-
Wait until the printer is idle and silent before you continue.
-
With the printer turned on, disconnect the power cord from the rear of the printer.
-
Unplug the power cord from the wall outlet.
-
Wait at least 60 seconds.
-
Plug the power cord back into the wall outlet.
-
Reconnect the power cord to the rear of the printer.
-
Turn on the printer, if it does not automatically turn on.
-
Wait until the printer is idle and silent before you proceed.
Have you tried performing a semi-full reset on the printer? And then tried restoring the factory defaults?
If you haven't tried, please go ahead and reset the printer. I am sending you a private message with the steps.
Let me know the outcome.
Cheers 🙂
