To save as a word document, you must have optical character recognition (OCR) software. Either in the printer or a 3rd party application.
I looked here and did not see any OCR software
There is free OCR software available here.
You can use a smartphone and Office Lens
You can scan the document to a PDF on your PC and use Microsoft Word to convert to text. Good luck with that.
