I've been unable to find instructions for using the HP Easy Scan application to scan multiple pages into a single document on my MFP M277 dw. Is there a different scanning application that I should be using?

As I understand, you're trying to scan multiple pages into one page,
Don't worry as I'll be glad to help,
Please refer to these steps:
Save multi-page documents or a collection of photos into one PDF file using the HP Easy Scan app.

Search the Mac for scan, and then click HP Easy Scan in the list of results to open the app.

Scan a document or photo using the app.

If you , continue to the next step.scanned multiple pages from the ADF

If you scanned from the scanner glass, load the next page or photo, and then click Scan Next Item or Add. Repeat this step until all pages or photos are scanned, and then continue to the next step.

Click Send, and then click Folder.

Select PDF in the Format menu. NOTE: HP Easy Scan does not support adding multiple JPEG, PNG, or TIFF photos into a single file. You must save photos in the PDF format to save them all in one file.

Click the Where menu, and then select a folder to save the scan to.

Select the checkbox next to Save all items to a single file.

Click Save.
You could try other applications for Scanning purpose:
Additional apps can be used to scan from a Mac computer, including the HP Scan software and Apple Image Capture.

HP Scan software: HP full feature scanning software included with many HP driver packages for OS X 10.11 or earlier. Search the Mac for 'HP' to see if the software is installed.

Apple Image Capture: Preinstalled app in macOS and OS X that supports most scan functions. NOTE: Scan functions similar to Image Capture are also available in Preview and in the Printers & Scanners tools in System Preferences.

AirPrint: If you set up the printer with AirPrint without installing any HP drivers, you can still scan with preinstalled Apple apps such as Image Capture.
