I have an older 6830 printer.  If I scan a 10 page document using Easy Scan, all the pages show in the preview but when you save the file to .pdf, only the first page is in the file.  You can scan to .jpeg but that creates a file for each page.  If you are using a Mac, it does not appear that the newer IOS systems work with Easy Scan.  The only workaround I have found is to use Image Capture, a built-in Mac app that scans.  It can be found in Launchpad and then go to "Other".
