I've tried for an hour now to set up Scan To Network Folder, and no matter what I try, I get "Incorrect Credentials - Check Your username/password and try again when I test the path".

Welcome to the HP Community Forum.
If you have not yet done so,
If your printer supports EWS > Scan > Scan to Network Folder
Add the following to your checkpoints:
EWS
Open your favorite browser > type / enter Printer IP address into URL / Address bar
Tab Scan > Scan to Network Folder > Network Folder Setup
- Mapped entries that cannot read the host (computer / remote system) name can be accessed using the device IP address
and...
- Folders on the local Windows computer must be Shared and the read access open - Open the Advanced Sharing section, click the user / owner to highlight, check the access (should be "full control")
- If it's not working and you have not done so, switch on Network Discovery and File / Printer sharing (in Windows Features)
- Check the SMB settings (not likely an issue - worth a quick look)
- When you Edit / Test your Profile, swipe to remove the PIN dots (do this even if you were not using a Pin)
- If you are mapping to a remote system, for example a NAS, make sure the shared directory (folder) is in Group Everyone
