I have an HP Envy 5640 printer which I have used successfully many times to scan documents to my email address. However when I scan a document now, it is being sent to my email address in an unknown format and I am unable to open it. (Doesn't open on my mobile, ipad or laptop - error message says File format is not supported). There are no settings options on the printer to change the format. Any advice appreciated.

The issue has been reported - I have added your thread to the list.
The more official answer (unknown if it will work) is to try a different scan-to-email method.
For example, if you are using HP Scan, try using HP Smart.
Unofficially, and to be considered as a temporary and completely voluntary workaround...
What is the cause?
The root cause is under investigation.
What happened to the file / data?
The file is OK, that is, the file's internal formatting is not damaged - but the filename and filetype are thrashed and the result is that the data cannot be opened.
The workaround...
Try / Consider
Download and save the file to your computer
Open File Explorer
Navigate to the folder in which the file is stored (likely Downloads)
Single right-click on the file
Open Properties
In tab General
For PDF: Remove the existing name of the file and replace it with something that ends with a .PDF suffix
For JPEG: Remove the existing name of the file and replace it with something that ends with a .JPG suffix
Click OK to save the change
For example, name the file "Test.PDF" OR "Test.JPG"
