When I had Windows 7 I vaguely remember the scanning software that I downloaded had an option to run 2 sided documents through the feeder, it would scan all the pages, then instruct me to put the documents in the feeder in the same order and it would continue, leaving me with all the pages in a PDF in the correct order. So, it would scan the odd numbered pages first, then the even numbered pages (or vice-versa) then the software would re-arrange the pages in the correct order. The software that I downloaded for Windows 10 however looks completely different and doesn't give the option to scan two sided documents. How can I do it?Where is the setting for 2 sided documents from here?

MSI Is an installation program (Windows installer package), simialr to EXE:

Once installing the program an HP Scan Extended icon will be added to your start menu, then try scanning from the added program as suggested, the HP Scan Extended program offer PDF scanning.

Hi,
From seeing your picture the printer is set for simplex (1-sided) scanning.
Press the Change Settings button at the right, then look for an option to change from simplex to duplex (2-sided) scanning.

Hi,
Try installing and using HP Scan Extended instead:
http://ftp.hp.com/pub/scanners/HPScanExt/HPScanExt.msi
Select Save as PDF, then click More > in the right pane.
Look for Page Sides and change it to 2-sided.
May you able to scan both sides automatically using this program instead?
