I have a HP OfficeJet 3800., When I open the HP printer assistant the only options it gives me is Shop or help...The scan print scan, fax option is grayed out. Does anyone know how to get this option to work? The printer is set as my default printer and documents are printing fine

I did not find an Officejet 3800 - I did find an Officejet 3830 series...
The restriction: You cannot use the "Printer Assistant" with Windows S mode - Windows S mode does not allow you to download and install the Full Feature Software (used in the Printer Assistant shortcut).
Windows S mode is a limited, "locked down" version of Windows that restricts downloads to those applications available in the Microsoft Store.
What to do?
Assuming the printer model is as guessed - or anything that supports HP Smart, you can use the HP Smart for Windows application.

HP Scan and Capture - Microsoft Store (formally Windows Store) - Requires Windows 8 or higher
- Download-Save-Install HP Scan and Capture
Windows Scan – Microsoft Store (formally Windows Store) - Requires Windows 8 or higher
- “Get” the application from the Store > Windows Scan
and possibly
Webscan – located in the Embedded Web Server (EWS) – No additional software
NOTE: Webscan feature is not available on Laser printers
If the printer is on the network,
If the EWS feature is available on your printer,
- Open your favorite browser > type / enter Printer IP address into URL / Address bar
- Tab Settings > Security > Administrator Settings > Enable >> Check box next to Webscan
- Click Apply to save any changes

- Tab Scan > Webscan
- Set up Webscan the way you want it - for example, set the Source to ADF
- Click Start Scan to scan your document / image using Webscan
- After the scan is complete, Save the scan to your computer.
