I am trying to scan on my HP Officejet 6968 and I want to scan in black but the only option is grey.

Might be true -- or could be a limitation of whatever software or application you are using

 

Perhaps there is an option you can try to get a result that you can use.

 

Example - HP Smart - Windows - Scan > Photo > Edit > Filters
